Artificial Neural Networks was applied to build neural models for the modelling of the Extra Virgin Olive Oil (EVOO) elaboration process, in an oil mill. This agro-industrial process was treated as three black-box architecture where an input signal, obtained on line by near infrared (NIR) sensors, is modiffied at each one. This process has been equated to a ‘multistage filter in cascade system’ where the process variables, as manipulated variables in each stage, generated a transformation in the product, that it is associated with the changes in NIR signal. These neural models were implemented in a Matlab graphical user interface to obtain a virtual twin of elaboration process.
